The nasty things I do or will do are:

very verbose web server logging
establish an implicit or explicit session context
long-lasting cookies to track repeating visitors
real-time tracking of requests (via web bugs or a tail on the web server log)
reverse traceroutes just for fun (no offense!)
running JavaScript on the client to obtain more characteristica than the usual http request headers, like e. g. screen resolution
placing special goodies for the googlebots, crawlers, and the like
